Coconut Muffins

Ingredients:

  • 1 cup sugar, 200g
  • 2/3 cup toasted flaked coconut, 32g
  • 4 tablespoon butter, 30g
  • Coconut cream powder, 55g
  • 2 eggs
  • 1 ½ cup flour, 220g
  • 1 teaspoon baking powder, 4.5g
  • Water. 100ml
  • ¼ teaspoon salt, 2g

Preparation:

  • In a bowl, cream sugar, butter and eggs together.
  • Blend in all other ingredients.
  • Divide batter evenly into 8 greased muffin cups or use paper cups
  • Bake at 350 degrees for 20-25 minutes.
